Harvest: Harvesting period established based on chemical analysis and tasting of the grapes in the vineyard, mid-October. Harvested entirely by hand into crates, with further selection upon arrival at the winery.
Winemaking: Destemming, 80% whole grapes, soft pressing of the remainder, maceration and alcoholic fermentation with indigenous yeasts for approximately 45 days in glass-lined concrete tanks. Malolactic fermentation in stainless steel.
Refinement: In stainless steel tanks on the fine lees for at least 10 months, no clarification or filtration, and then at least 3 months in bottle.

Characteristics: Ruby red in colour tending towards garnet, it is fruity on the palate,
Slightly herbaceous, with spicy notes and silky tannins. Delicate finish of licorice and vanilla.

Suitable for Florentine steak and grilled red meats, perfect with red meat and/or game dishes. Try it with extra dark chocolate.
