Harvest: The harvest date is determined based on chemical analysis and tasting of the grapes in the vineyard, at the beginning of ripening. Harvest is entirely manual, with further selection upon arrival at the winery.
Winemaking: Destemming and gentle pressing, very brief maceration for about 20 minutes, soft pressing, alcoholic fermentation with indigenous yeasts triggered by a pied de cuve of the same grape variety, and malolactic fermentation in stainless steel. Second fermentation in the bottle thanks to secondary fermentation with the sugars from the same must. No fining or filtration.
Refinement:It rests on the lees in the bottle for at least 6 months. It is not disgorged.

Characteristics: With a dull amber pink color, it's crisp on the palate and has a fresh, savory, and dry flavor. It's spicy with hints of gunpowder, then becomes fruity with floral and citrus notes. The perlage is fine, with a fine, persistent grain.
Suggestions: Fun and delicious, it pairs well with baked goods like pizza and focaccia, burgers, bold seafood dishes, and soft cheeses, including blue cheeses. Perfect with savory pies, particularly savory red pizzas, and smoked foods. Try the Orbetello eel or raw shellfish.
