Harvest: Harvesting period determined based on chemical analysis and grape tasting in the vineyard. Late September/early October. Harvest is entirely manual, with further selection upon arrival at the winery.
Winemaking: Destemming, 70% whole grapes, soft pressing of the remainder, maceration and alcoholic fermentation with indigenous yeasts for approximately 15 days in glass-lined concrete vats, malolactic fermentation in stainless steel.
Refinement: In stainless steel on the fine lees for 9 months, no clarification or filtration, and then at least 2 months in bottle.

Characteristics: Ruby red in colour, it is fruity and tannic on the palate.,Slightly herbaceous. Hints of red fruits and pepper with a fresh and delicious finish.
Suggestions: Suitable for accompanying all traditional Tuscan dishes. Perfect with grilled meats and Tuscan cured meat snacks. Also very enjoyable chilled.
